of stockyards in the city in the late 1880s, although demand there had shrunk
so few restaurants still offered it. They remain popular in the Ohio River
valley, where they are served large portions of hamburger bread.

In Evansville, Indiana, they
are still offered at some "mom and pop" restaurants (family
restaurants at the inn), especially Hilltop Inn, and remain a favorite dish,
featured at the "West Side Nut Club" Autumn Festival in the city. Kissner's,
a traditional workers' drinking room in Defiance, Ohio, has been offering brain
sandwiches since 1928.
