Yarg or
Cornish Yarg is a cheese from the Cornwall region of England made with milk
from Friesian cattle. The recipe for the cheese was first made in 1984 by Alan
Gray in Treplay Rancher near Truro in western Cornwall.
He then moved to Netherton
Ranch near Liskeard to make the cheese along with Michael Horrell and his
family. The name "Yarg" is the opposite of the cheese maker's name
"Gray". Cornsih Yarg cheese never won a silver medal in the "British
Cheese Awards" in 1995.
The cheese has a diameter of
about 25 centimeters, 7 centimeters thick and weighs 3 kilograms. The texture
of Yarg cheese is soft and tastes fresh, full of cream and a slightly sharp
odor. During the ripening process, the cheese becomes softer on the outside and
then inside.
