Stilton is
a British country cheese made with pasteurized cow's milk and has a
blue-textured texture due to the addition of mushrooms to the manufacturing
process. Stilton cheese has a high cylindrical shape with thick, wrinkled and
solid skin.
The color of the skin is
grayish brown with white patches. The skin has very small holes that are the
result of jabbing needles. The needle is inserted on the cheese shell so the
air inside the cheese can come out.
The weight of this cheese
ranges from 2.5 kilograms or 8 kilograms. Stilton was first popularized by the
Bell Inn, an inn for tourists from London going to York. The young Stilton
cheese is ivory and brittle. While the old Stilton cheese has a darker color
and has a more prominent blue style.
