Shropshire is
a blue cheese made with pasteurized cow's milk. The cheese was first discovered
in Scotland and later introduced to the Stilton cheese maker. Shropshire cheese
has a resemblance to Stilton cheese but this cheese has an orange color
obtained from the addition of [[annatto].
The skin of this cheese is
coarsely textured and brown. The texture of the cheese is solid, full of cream
and slightly brittle. Meanwhile, the taste of Shropshire cheese is sharper than
Stilton cheese. If the bottom of the blue cheese is wider than the top then the
cheese is said to have the bottom of the "damp".
This is because the cheese
is not reversed quite often during the maturation process. Therefore, the
moisture from the cheese drops down and makes the top of the cheese dry.
