Serra
da Estrela is a cheese from Portugal that uses raw sheep milk in the
process of making it. Traditionally, the cheese is produced in the Serra da
Estrela mountains in central Portugal. This cheese earned the nickname as
"King of Portuguese cheese".
This cheese is a
round-shaped mountain cheese with a diameter of 15 to 18 centimeters and a
height of 5 to 6 centimeters. The weight of this cheese ranges from 1 to 2
kilograms. The inside of this cheese is pale yellow and has no holes.
This cheese skin has a dense
and hard texture. This cheese is matured for at least 30 days, but if it is
matured longer then this cheese will become harder and taste more sharp. Serra
da Estrela cheese is produced in winter from November to March.
