Scamorza
(also known as scamorze or scamorzo) is a type of filata pasta from cow's milk
originating from Italy. Examples of other filata pasta cheeses are Provolone,
Caciocavallo, and Mozzarella The name scamorza means "beheaded" in
Italian. Named as such because the appearance of scamorza cheese is usually
placed in a bag and tied with a rope. There are two types of scamorza cheese,
the usual and the smoked (affumicate).
