Sanuki udon (讃 岐 う ど ん) is the most famous udon mi type in the Shikoku
region, but is now easily found in neighboring Kansai and all of Japan. The Mi
is characterized by a square and flat shape.
Some udon
towns now specialize in selling sanuki udon, and usually identified by the text
"sanuki" in hiragana (さ ぬ き) appearing in the name of the character or
signpost.
The Mi is
usually served as a soup noodle, and is usually popularized in Kagawa
Prefecture, Japan.
Sanuki udon
takes its name from the previous name of Kagawa Prefecture, Sanuki Province.
