Saint
Paulin or also known as Port Salut is a French cheese made with
pasteurized cow's milk. This cheese was first made in 1930 and has become
popular ever since.
Saint Paulin cheese is the
first French cheese to be produced using pasteurized milk. Some cheese makers
tried to convert the use of pasteurized milk into raw milk in 1990 but Saint
Paulin cheese still uses pasteurized milk.
The flavor of the cheese is
sour as well as sweet and slightly smoky. The shape of the cheese is usually
like a wheel while the color ranges from pale yellow to bright orange. The
Saint Paulin cheese is suitable to be eaten along with fruits and light wines.
