Saint Agur cheese making is
only done in a small village called Monts du Velay in the Auvergne region. This

or served in a salad.
This cheese is hard to find
and has a very sharp and spicy taste after going through the maturation
process. The texture of the Saint Agur cheese is moist and full of cream. This
cheese is softer than other blue cheese from France. In this cheese there are
blue mushrooms that are spread evenly. The shape of this cheese is unique
because it is octagonal.
