Roncal is
a cheese from a region of the same name in Spain and is made using pasteurized
sheep's milk. There are seven villages in the Roncal valley in the Navarre area
that produce this cheese.
This cheese is the first
Spanish cheese certified and protected by DO (Denominacion de Origen). The
shape of Roncal cheese is a cylinder with a brown or straw-colored skin. It
weighs between 1 to 3 kilograms.
The color of this cheese is
yellow whitish. Roncal cheese has some small holes in the inside. The milk used
to make Roncal cheese must come from Latxa and Navarre sheep. The young Roncal
cheese is often eaten with bread. In addition, this cheese is also often used
for roasting with vegetables or meat.
