Quarks
(also called Quarg, Tvaroh, Tvorog, or Topfen) are fresh German cheeses made
with thickened cow's milk. Quark in German has the meaning of "curd".
Quark cheese has a very soft
texture like cream and white. This cheese has similarities in texture and
flavor with sour cream. Because of the similarity, Quark is often used as a
substitute for sour cream or vice versa. Quarks are often used to make sauces,
salads, and cheesecakes or smeared on bread.
