Polenta (Italian pronunciation: [polɛnta] ) is a boiled
corn meal dish from Northern and Central Italy, and can also be found in the
Savoie region, Switzerland and Romania. These foods can be served as
"porridge" hot or allowed to cool and harden and then can be roasted,
fried or baked.
Polenta takes
a long time to cook, which is about 45 minutes and must be continuously
stirred. Several alternative techniques have been used to speed up the process
or make it unnecessarily continuously monitored. Fast-cooked polenta only takes
a few minutes, but this type of polenta is considered to be of lower quality
and better eaten after being roasted or fried.
