Picodon is
a French cheese made with pasteurized pasteurized milk. This cheese has been
certified AOC and can only be produced in the southern Rhone region, including
Ardeche and Drome, the Barjac canton in the Gard department and the Valreas
canton in the Vaucluse department.
This cheese has a thin skin
that has the scent of a stone cave. The inside of this cheese is solid and
aromatic. Often this cheese is wrapped together with spices in a bottle of
green olive oil. Picodon cheese coated with a layer of mushrooms and the longer
this cheese is matured then the mushrooms will be more visible.
This cheese is matured at
least 12 days. If the Picodon has been matured for 1 month then the cheese
enters a new phase called "Dieulefit-Affinage". At this stage the
cheese is washed with salt water several times and rubbed with wine or brandy.
