Ossau-Iraty or
Ossau-Iraty Brebis-Pyrénées is a cheese from the Pyrenees region of France made
with raw sheep milk. This cheese has a cylindrical shape with a diameter of 25
centimeters and a height of 12 centimeters. The weight of this cheese ranges
from 4 to 5 pounds.
This cheese has a smaller
variant named Petit Ossau-Iraty with a weight of 1 to 3 pounds. This cheese has
a smooth and thick skin and is yellow or gray.
The Ossau-Iraty cheese is
still produced in the mountains using the milk of the black-headed sheep of
Manech sheep. This cheese has been certified by the AOC and therefore must meet
several provisions, such as the coagulation process should use rennet and its
maturation should be 60 days for small and 90 days for large ones.
If the provisions are
not met then the cheese from this region can not be called Ossau-Iraty but will
be called Fromage de Brebis.
