Limburger is
a soft textured cheese that uses pasteurized cow's milk in the process of
making it. Originally this cheese came from Belgium and was named from Limbourg
province. Later in the 19th century Belgian workers introduced this cheese to
the Allgau region of Germany. This cheese has a shape like a brick so often
called the term "brick cheese".
The most prominent feature
of Limburger cheese is its very prominent and strong smell. While the flavor of
this cheese is spicy and has a distinctive aroma like the aroma of meat. The
color on the inside of this cheese is yellow. Although the texture is quite
strong and solid but this cheese can become wet and slimy.
