Laguiole is
a French cheese produced using unpasteurized cow's milk first. This cheese
comes from the Aubrac region which is a plateau.
Laguiole was first mentioned
in the 4th century. Gaius Plinius Secundus had talked about this cheese in his
work. The cheese has a cylindrical shape with a diameter and a height of 41
centimeters and weight ranging from 45 to 48 kilograms.
The inside of this cheese
has a yellow color like straw. The best cheese Laguiole is cheese made with
milk "transhumance" produced in late May and mid-October. In those
months cows are fed into mountainous areas filled with violets and wild plants.
