Ibores is
Spanish cheese made with raw goat milk. This cheese gets its name from an area
in Extremadura that is Los Ibores where this cheese has been produced since
Roman times. The area is a plateau surrounded by mountains.
The weight of the Ibores
cheese is between 0.5 to 1.3 kilograms while the shape is cylindrical. His red
skin contrasted with the white inside. The skin of this cheese has been smeared
with powdered peppers or olive oil during the ripening process which makes the
skin red.
Cheese Ibores are produced
using raw milk from three types of goats, namely Serrana, Verata, and Retinta.
Before sold in the market, this cheese first matured for at least 2 months.
