Hishimochi (菱
餅) is
a three-layer mochi with rhombic shapes with pink, white, and green. This cake
is a special meal for Hinamatsuri every March 3 in Japan. In addition to being
displayed with a doll, hishimochi is eaten after baking it first.
This cake generally consists
of 3 colors, but made into 5 colors up to 7 colors in some areas in Japan. The
color of this cake symbolizes the early sights of spring when the young grass
begins to grow under the remnants of melting snow while the peach tree begins
to bloom. Hishimochi is known today derived from the hishimochi model made in
the Edo period.
