Gubbeen is
Irish cheese made with milk from Friesian, Kerry and Brown Swiss cows. The name
of this cheese comes from Gaelic which means "little mouthful".
The name refers to a bay
west of Schull, West Cork. This cheese is the creation of Tom Ferguson and Gina
Ferguson in 1979.
Gubbeen cheese has won the
silver medal at the "British Cheese Awards" twice. The taste of this
cheese is savory while the texture is dense and tastes sweet. This cheese has
pink and white skin caused by the cheese washing that is done every day. The
milk used to make this cheese is milk that is milked in the morning.
