Emmental,
Emmentaler, Emmenthal, or Emmenthaler is Swiss cheese made with raw cow's milk
and has many large holes or "eyes". This cheese is known as
"Swiss cheese" in North America although Swiss cheese does not always
refer to Emmental.
Emmental cheese mix in
Norway known as Jarlsberg. This cheese gets its name from its original region
of Emme valley in Canton Bern and has been certified by the AOC (Appellation
d'Origine Contrôlée).
AOC certification causes
only cheese produced in Emmental alone that can be labeled "Swiss
Emmentaler". However, the name "Emmental cheese" is not
protected so many copies are produced in different countries.
