Edam
(Dutch Edammer) is a Dutch-style cheese traditionally round and bright yellow
and wrapped in paraffin and red nights. This cheese is so named because it was
first made in Edam, North Holland Edam, at least 17 weeks old, wrapped in a
black night instead of red or yellow.
Edam cheese has a very soft
taste, slightly salty or tastes like nuts, this cheese also does not smell when
compared to other cheeses. This cheese also has a much lower fat content than
other traditional cheeses as much as 28 percent with a protein content of 25
percent. Modern Edam cheese is much softer than other cheeses, such as Cheddar
Cheese, because of its lower fat content.
