Chevrotin is
a French cheese made with raw goat milk. The Chevrotin cheese comes from the
Savoy in the Rhone-Alpes region and has been known since the 17th century. The
meaning of the name "Chevrotin" is "little goat".
Chevrotin cheeses are
produced in the same way as Reblochon cheese and therefore have similarities in
appearance and texture. The milk used is only milk from goats that are grazed
in summer in the mountains and fed on straw in the winter.
Chevrotin cheese is placed on pine wood and matured for
at least 3 weeks. During the maturation process, three times a week the cheese
is reversed and washed with salt water.
