Brocciu or
Broccio is a cheese from Corsica, France made with a mixture of goat's milk and
raw sheep's milk. The name of this cheese comes from the word brousser which in
Corsican has meaning "hit".
This is because the process
of stirring is done in the making of the cheese. Fresh Brocciu cheese is known
as Brocciue frais or Broccie sec or Brocciu passu. The milk used to make this
cheese is sheep's milk in winter and goat milk in the summer.
Traditionally this cheese is
made by using whey but now skim milk is commonly used. The Broccian cheese with
the AOC emblem must come from Corsica and is produced in the Corse-du-Sud and
Haute-Corse regions. This cheese is produced in four sizes, namely 1/2 pound, 1
pound, 2.2 pounds and 7 pounds. Fresh Brocciu cheese is known as Brocciue frais
or Broccie sec or Brocciu passu.
