Brie is
a soft textured cheese from pasteurized cow's milk from France. Brie is
produced in the Ile-de-France area just east of Paris. Before transportation in
France developed this cheese can not be sent to other areas other than Paris,
so people often call it "Paris cheese".
Genuine French Brie cheese
uses cow's milk that is not pasteurized so it feels more complex. While Brie
cheese is exported to other countries using pasteurized cow's milk so it can
last longer and not susceptible to infection from bacteria.
