Beaufort is
the name of a cheese from the Savoie region of France made with raw cow's milk.
Because it is a family of Gruyère cheese, this cheese is often called "Gruyère
de Beaufort".
This cheese is shaped like a
wheel with a large size. The diameter of the cheese is 60 centimeters while the
height is 21 centimeters. The weight of Beaufort cheese can reach 75 kilograms.
Before being sold in the
market, this cheese is checked first by a special committee. If the cheese has
met the standard then the cheese will get a green tree emblem on the edge or on
the wrapper.
A semi-finished cheese
matured for 6 months in a cold cellar. Beaufort cheese that has been matured
for more than 6 months can be called "high mountain cheese".
