Asiago is a hard-textured cheese that comes from Italy and is made using
pasteurized cow's milk. Hundreds of years ago, Asiago cheese uses sheep's milk
in the making.
However,
because the cow can produce more milk than the sheep then gradually sweep milk
used. There are two types of Asiago cheese are known. The first type is Asiago
cheese that is pressed slightly and uses pure milk from a small farm. Type
cheese matured for 20 to 30 days.
The other type
is Asiago d'Allevo which is a mature version of Asiago cheese. Asiago d'Allevo
is made with skim milk and has a long ripening time. It affects the sharper
flavors and the more dense and perforated inside.
