Yee sang or yusheng (Hanzi: 鱼 生;
Pinyin: yúshēng) is a Tiochiu dish of fresh fish salad plus finely sliced
vegetables such as carrots and radishes. The fish used is sliced tuna or salmon
that could have been soaked in a mixture of sesame oil, cooking oil, and
pepper. The sauce is made a mixture of oil (cooking oil and sesame oil) with
additional plum sauce, sugar, and cinnamon powder.
Chinese characters for fish
(鱼) and excessive (余)
are both read as yú. The Chinese script for yúshēng (鱼 生) is also a homophon with yúshēng (余
升)
which means an increase in abundance. Therefore, this food is believed to be a
symbol of abundance and prosperity for those who eat it.
