Umeboshi
(Japanese: 梅ned,
spelled [u͍meboɕi] or literally "dry ume") is a dried pickle made
from ume (Prunus mume) which is commonly found in Japan. The real taste is acid
and salt, but is now also created in a variety of flavor choices. Normally ume
is salted, but in the modern production process can also be made by pickling
technique by soaking in vinegar solution so it is not too salty.
