Pad thai or phat thai (Thai: ผัด ไทย, RTGS: phat thai, ISO p̄hạdịthy, pronunciation [pʰàt tʰāj] (see "Thai
Tumisan") is a fried kwetiau dish commonly sold as a street snack in
Thailand. This dish is made from kwetiau or rice noodles soaked in water, then
sauteed with a mixture of eggs and sliced tofu, and flavored with tamarind,
fish sauce (nampla น้ำปลjana), ebi, garlic and onion, red chili
and java sugar, served with lime slices and slices of fried peanuts.

Pad Thai may also use other vegetables
such as sprouts, chives, cilantro, pickled radish (hua chaipo หัว ไช โป๊), as well as raw banana flowers. Some also add fresh shrimp, crab, chicken
meat, or other protein sources. The vegetarian version may replace fish sauce
with soy sauce, and do not use shrimp.

In Vietnam, there is a pad thai-like
dish called phở xào or bánh phở xào sa tế, which means "phở stir
fry".
