Lamian is
a Chinese-style attraction noodle. Lamian is made by twisting, pulling,
stretching, and folding the flour dough to form thinner threads. The length and
thickness of the yarn depends on how many times the dough is folded and spread.
The unique way to make this noodle comes from China.
Songshi Yangsheng Bu (Tionghoa: 宋氏 養生 部), written by Song Xu from 1504, writes about the earliest descriptions of the way of making lamian. Both Japanese ramen and Korean ramyeon are believed to be derivative products of Chinese lamian.
