Gochujang is chili paste for Korean cuisine whose
main ingredients are glutinous rice and fermented pepper powder. Traditionally,
the fermentation of gochujang is done in the yard inside a large pottery jar.
Place is placed on the base of a stone structure called jangdokdae (장독대).
Characteristic of gochujang is a
slightly spicy sweet taste even though it looks very red. In Korea, gochujang
is a very important spice. The origin of the word gochujang is gochu (고추, chili) and jang (spice).
