Gibanica
(Serbian: Гибаница, [ɡibanit͡sa]) is a traditional pastry dish from Serbia and
is popular throughout the Balkan country. Usually made with white cheese and
eggs. Recipes can range from sweet to savory, and from simple thin layer cakes
to festive and elaborate.
A derivative of the Serbian
gibati verb, meaning "to fold, sway, swing, fragile", the cake was
mentioned in the Serbian dictionary Vuk Stefanović Karadžić ie Srpski rječnik
in 1818. This food is usually served for breakfast with kefir or fresh yogurt .
In addition to the Balkans,
Gibanica can be found all over the world in restaurants serving Serbian
cuisine. This is one of the most popular and recognizable pastry dishes of the
