Gangjeong (강정) is a traditional Korean cake type
(hangwa) made from glutinous rice with various shapes and sizes. Gangjeong is
presented by Koreans during important events such as weddings, ritual
ceremonies, as well as the new year festival of Seollal.
The process of making this
cake starts from the main ingredients of glutinous rice, pounded until smooth
and mixed with water into batter. Then this material is cut into small pieces
the size of fingers, dried and fried with oil in the frying pan until the
texture is crunchy. After cooking, the pastries are coated with yeast syrup and
flour made from a mixture of sesame seeds, soybeans, pine nuts, pollen and rice
flour.
