Galbitang is a kind of tang (soup) in Korean
cuisine made from beef rib bone soup. This soup is also known as galbitguk and
the way of cooking is somewhat similar to jangguk dishes (soy sauce soup),
gomguk (meat soup) and malgeunjangguk (soy soy soup).
The ingredients used are beef ribs
(galbi) cut in small sizes of about 5 to 6 cm and then boiled in a sauce and
given a soy sauce. After the meat is boiled it becomes soft and produce broth,
then given a finely chopped onion. In the past galbitang cuisine served to
entertain guests, but now served in restaurants instead of noodle dishes.
